1 small onion, 2 tablespoons pine nuts, 2 boneless skinless chicken breasts sliced into thin strips, 1/4 cup sun dried tomatoes, drained, 1 cup chicken stock, 1 cup sour cream, grated parmesan cheese, basil
Heat the oil in a large frying pan and sauté the onions and pine nuts for about 5 mins.  Add the strips of chicken and sauté for a further five minutes, add the sun dried tomatoes a cook for 1 min.
Pour the chicken stock into the frying pan and bring to the boil. Â Stir in the sour cream and parmesan cheese. Â Toss the pasta with the sauce and stir in the basil.
